I'd guess that by making an indentation (or even a hole) in the middle of the meat, you are effectively increasing the surface area of the meat upon which the ambient temperature is acting, plus the outside of the meat is also being warmed from the inside - i.e. from the indentation, meaning it warms through faster.

That's my physics exhausted.
